This is our experimental Brut IPA that includes a healthy dose of malted rye in the grain bill to give it a pleasant spiciness and bread-like quality. We wanted an interesting hop combination that would compliment the malted rye so Mosaic was selected for its citrus aroma and flavor along with Nelson Sauvin's tropical notes to enhance the earth and spice character of the rye. The result is an IPA that has a very little bitterness but loads of spicy hop aroma and flavor.
