A "cold IPA" is made with a combination of pilsner malt, plus flaked rice and maize. This beer was mash hopped with Apollo and also Phantasm Powder. During active fermentation, it was dry-hopped with Sabro, Talus and Mosaic. Fermented with a bio-engineered lager yeast fermented with a lager yeast meant to maximize thiol production. The fermentation is started cold and allowed to free rise up to low ale temperatures.
