Primary fermentation for Quidity is 100% brettanomyces (harvested from West Flanders, Belgium) in a syrah barrel from San Jose's own Coterie Winery. The result is a yeast-driven beer with a nose of citrus and fresh leather, a very subtle sour note, and just barely a hint of wine barrel. Secondary fermentation happens in the bottle to provide a Champagne-like effervescence. The name Quidity is a bit of a portmanteau of the term "Quiddity" and the word "Liquid". Quiddity means the "inherent nature of something". This liquid is best enjoyed slowly to give it time to unravel and expand to reveal itself to you.
